Bodegas Dios Baco was founded in 1765 by the Vergara family and a British firm. In the early 20th century, Sr. Juan Vergara partnered with Sr. Juan Palomino to form the conglomerate, "Los Doce Disciples,” or the Twelve Disciples. The principal cellar amongst the original twelve was Bodegas Dios Baco. In 1992, the Paez Morilla family bought the property and began extensive renovations in the cellar and the vineyards. Currently managed by Jose Paez Morilla, his mission is to produce handcrafted, small-production lots of traditionally made Fino, Manzanilla, Amontillado, Oloroso, Cream and Pedro Ximenez.

Tasting notes

A deep mahogany with aromas of roasted hazelnuts and toffee, this rich, full-bodied sherry is balanced by moderate acidity. The finish is long and clean.

Technical notes

After the wine is designated as Oloroso, it is fortified and moved to the Oloroso Solera. To be considered an Oloroso, the sherry must age in barrel for a minimum of eight years. Before bottling, the cellar master adds a small amount of Moscatel, which lends softness and a little sweetness.
