| Harvest occurs at the end of September, and the twogrape varieties are fermented separately. Following a maceration period of five days, fermentation ensues at a controlled temperature of 68°-71° F. The Pinot Noir is refined in medium-toast French oak barrels, and the Corvina in concrete, glass-lined tanks. The two wines are blended several months before bottling, and the wine rests in bottle before release. |
