Particularly fruity and elegant on the nose, and on the palate rich, smooth and pleasing.

Grape varieties used are those typical to the Orvieto Classico area. In this wine the maximum quantity of the Grechetto variety allowed by the DOC law has been used, and also the introduction of a percentage of 'non- indigenous' Chardonnay. The composition is as follows: Procanico 40% Grechetto 27% Verdello 15% Drupeggio & Malvasia 3% Chardonnay 15% .

The first vintage of this estate grown Orvieto ClassicoCastello della Sala to be produced was the 1990 vintage. With the 1997 vintage, the wine became an Orvieto DOC Classico Superiore (the new 'Superiore' denomination came into being the same year). The 'Superiore' denomination specifies that the yields per hectare must be much lower than for normal Orvieto Classico - the grapes are to be harvested only when in an advanced state of maturation, and the wine can be released only after the 1st March following the vintage. The Castello della Sala estate is located 11 miles from the town of Orvieto . The castle is an outstanding example of medieval military architecture, and its extensive vineyards enjoy an ideal micro-climate for the production of cooler weather wines such as whites and Pinot Noir.
